Countdown to T-Day: 13 and counting…!

Time to start gathering recipes for Thanksgiving Day! Do you always stick to your ‘old standbys’, or like to try new dishes for your family Thanksgiving meal? Well, here is the favorite dish of my family which is never left out: my mother’s stuffing for roast turkey or chicken. I must confess, Mom, that I lightened it a bit by cutting back the fat, and changed to whole grains. It still tastes just as delicious this way.

Joyce’s Stuffing Recipe

1/2 cup butter or Earth Balance buttery spread
1 cup onion; chopped
3 cups celery; diced
2 tsp thyme
2 tsp salt
1/2 tsp pepper
2 2/3 cups Swanson chicken broth (I prefer the organic)
2 cups minute brown rice
6 cups whole grain bread; cubed

Brown onion & celery in butter or Earth Balance buttery spread in a large saucepan ’til bubbly. Add seasonings and broth, and bring to a boil. Then add rice, and simmer covered for 5 minutes on low heat. Remove from heat (keep covered), and stand for 5 minutes. Then add bread cubes, mix thoroughly, and stuff into turkey or chicken cavity and roast. Extra can be baked in a cake pan separately for 30 minutes.

Yield: Stuffs one medium turkey or 2 chickens
Prep Time: 25 minutes
