Goods of the Body: Sweet Potato Nut Pie Recipe

Countdown to T-Day: 9 and counting…!

Here’s another recipe for Thanksgiving Day, or anytime that your activities will allow for a sweet indulgence! Delicious and full of antioxidants, Omega 3′s, etc.:
Sweet Potato Nut Pie
One 9” pie crust (homemade or refrigerated store bought)

Preheat oven to 350 degrees.

1 cup nuts (Walnuts are best for the Omega 3′s, but almonds, peanuts, pecans or any other favorite nut will taste great.)

In a small food processor (or by hand), rough chop the nuts. Spread out in a pan and roast for approximately 5 minutes. Set aside.
Pie Filling:
1 cup sweet potato, baked pulp (about 1 medium, peeled)
1/2 cup brown sugar
2 eggs, preferably Omega 3 eggs
1/2 cup evaporated skim milk
1 Tablespoon vanilla
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
Put the pie crust into a 9″ deep pie pan, or a 9″ springform pan. Flute the edges. Combine all ingredients and beat on medium speed until smooth. Do not overbeat. Pour into piecrust and bake 50 minutes (1 hour at high altitude) at 350 degrees. Make sure pie crust edges are covered with foil throughout cooking.
Toasted Nut Syrup Topping:
1/2 cup dark brown sugar
1/2 cup honey
1 egg
1 Tablespoon melted butter or Earth Balance buttery spread
1 teaspoons vanilla
¼ teaspoon of salt
¼ teaspoon of cinnamon
1 cup nuts, toasted
Combine all ingredients except nuts. Heat in microwave for about 1 minute. Stir in nuts. Spoon topping over baked pie, and bake for 10 more minutes. Cool on wire rack for 20 minutes or so, then serve. If any leftovers, refrigerate.

Serves 8-12.

  1. I am just concerned about the main source of Omega 3 which is the liver of fish. as you can see, fishes can accumulate mercury and pcb. ;~”
